aMaMa® Vegetable Purees and Flavor Bases are high-end products ideal for use in dairy products, gourmet cooking, fine condiments, desserts and salad dressings. The aMaMa® process retains and enhances most of the intrinsic COLOR, FIBER, FLAVOR, MICRONUTRIENTS and VITAMINS. Customization includes spicing or sweetening with a choice of added natural flavorings; or, infused with aromatic spice flavors during the cooking process.
aMaMa® Garlic Flavor Base is prepared with fresh peeled garlic, dry hot peppers and spices. It is inspired by a traditional recipe in India and is carefully modified for use in dairy and other food products, adding zest, wider appeal and versatility.
The aMaMa® Process
The aMaMa® process of cooking, flavoring and pureeing is kept clean and efficient through the specially designed and patented single vessel micro-batch apparatus which maintains the highest manufacturing standard.
The fresh, clean, peeled and cut vegetable is introduced into the patented apparatus. The product is first steam cooked while infusing the chosen flavors from whole dry aromatic spices; it is then pureed and further flavored or sweetened as needed and cooked in the same vessel. The finished product is then released directly into appropriate packaging for storage.
